Super fast, super easy and healthy!
Serves: 4
INGREDIENTS
1 pound lean ground beef (90% lean) 3 garlic cloves, minced or you can use 1 tablespoon of garlic powder
1 small onion diced ¼ cup brown sugar, OR stevia in the raw, OR honey -- your choice. Not all three :P ¼ cup soy sauce 2 teaspoons roasted sesame oil ¼ teaspoon ground ginger ¼ teaspoon crushed red pepper flakes ¼ teaspoon pepper
4 cups finely shredded cabbage OR spinach which ever you prefer...or both! YUM! 2 cups hot cooked white or brown rice sliced green onions and sesame seeds for garnish
INSTRUCTIONS
In a large skillet cook the ground beef, garlic, and onion breaking the ground beef into crumbles over medium heat until no longer pink. Add cabbage, toss well and lower heat, cover and simmer for 10 min or until the cabbage wilts.
In a small bowl whisk sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper.
Pour over the ground beef and let simmer for another minute or two.
Serve over hot rice and garnish with green onions and sesame seeds.
Notes: You can use chicken, bison, or turkey as your protein source in this recipe...it's all tasty. If you are a vegetarian use tofu or Quorn.
After writing this recipe up...I decided I wanted to have this for dinner.
However, I didn't have cabbage on hand so I used spinach and added corn!
This recipe is so versatile. Don't be afraid to experiment and throw all kinds of veggies in there!
