Hearty Winter Stew

INGREDIENTS
  • 1 large onion, chopped

  • 3 ribs of celery, chopped

  • 5 cloves garlic, minced

  • ½ head cabbage, chopped

  • 4 carrots, sliced

  • 4 potatoes, cut in large dice

  • 1⁄3 cup wild brown rice or other gluten-free option.

  • 1 bay leaf

  • 1 teaspoon thyme

  • ½ teaspoon rosemary, crushed

  • ½ teaspoon freshly ground black pepper

  • 8 cups vegetable broth or low-sodium vegetable broth

  • 3 cups cooked great northern beans (2 cans, drained)

  • 1 14 ½-ounce can diced tomatoes

  • Handful of fresh chopped parsley

  • 1 pound of lean, ground beef, bison, or turkey - omit and add Cannellini beans now you have vegetarian style!

DIRECTIONS

Brown burger on stove top with onions and garlic. Drain and set aside.

Crock Pot:

Place the vegetables, seasonings, and rice into a large (at least 5 quart) crock pot. Add enough vegetable broth to just cover the vegetables (about 8 cups; add more as needed). Add the ground meat, onion and garlic to the crock pot.

Cover and cook on low heat for 7 hours. Salt to taste.

Serve and only share if you want too! :) or portion it out and have lunches for the week! Enjoy!

To make it vegetarian just omit the ground meat.
