REVISED Pumpkin Protein Bars

A gluten free revised recipe of my favorite protein bars!

If you want something delicious and low calorie, but will also curb that sweet tooth...these are the snack for you...and the kiddos will love them too!


Nutrition Facts: (without walnuts & chocolate chips): 1 square = 50 calories, .7 g fat, 8 g carbs, 3.7 g protein

(with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein

Ingredients: ¼ Cup Stevia/Sugar Blend 4 oz applesauce 2 tsp. pumpkin pie spice 1 tsp. baking soda -gluten free 1 tsp. baking powder -aluminum free ½ tsp. salt 2 tsp. vanilla extract ½ Cup liquid egg whites 1 - 15 oz. can of raw pumpkin 2 Cups Pamela's Baking Mix 2 scoops vanilla protein powder ½ Cup almond milk - I use this brand as it's free from dairy, soy, and carrageenans ½ C chopped walnuts (optional) -- for the kiddo’s I have used mini chocolate chips sprinkled on the top

Directions: Preheat the oven to 350.

I coat my pan with coconut oil in a 9 X 13 Pyrex dish

Combine all ingredients and mix well.

If adding walnuts or chocolate chips, do so now and mix.

Spread batter into the Pyrex dish and bake for 30 min. (oven temps may vary cooking times)

Makes 24 squares of delicious-ness!

Suggestion: keep refrigerated or freeze if you aren't going to eat soon-ish as it can go bad fast since it’s so moist.
