Chocolate Chia Pudding

Chia Pudding

I just love this recipe! It is SO good and it's good for you!

I added a few halved strawberries on top and it was a perfect snack and curbed my sweet tooth.

The nice thing about this recipe is, it was quick to make and I knew EXACTLY what was in it.

I used all organic ingredients. Also, don't be afraid to experiment with flavor...if you don't like chocolate; use vanilla protein powder instead of the cocoa powder!

Serves: 4

Choose from any number of toppings for this "pudding" such as, shredded coconut, raspberries, strawberries, walnuts, almonds, or cacao nibs.

Ingredients: 1 cup coconut or almond milk 1 cup Greek vanilla yogurt 1/4 cup chia seeds 2 tablespoons honey 2 tablespoons unsweetened cocoa powder or cocoa mojo 1 teaspoon vanilla extract Pinch of salt

Directions: 1. In a medium bowl, whisk together the milk, Greek yogurt, chia seeds, honey, cocoa powder, vanilla extract, and salt. Cover and place in the fridge.

2. After about 30 minutes, whisk again to re-combine the chia seeds, and refrigerate overnight.

3. When you are ready to eat this on the next day serve in individual bowls, and add toppings of your choice.

Nutrition Information per serving (1/2 cup): 160 calories, 4.5g fat (0g saturated, 1.9g omega-3), 21g carbohydrates, 5g fiber, 9g protein, 20% calcium.
