What you need
3/4 Teaspoon of Salt and Ground Black Pepper
4 Chicken Breasts Cut into Strips
2 Eggs
1 1/2 Cup Panko Bread Crumbs - Use gluten-free ones if you have gluten issues. They do make gluten free Panko crumbs!
3 Tablespoons Grapeseed Oil - Considerations: for high temperature cooking, select cooking oils with a high smoke point
1 12 oz Bottle of Frank's Wing Sauce
1/2 Stick of Butter -- Real butter not that fake crap! :)
1 1/2 cup Shredded Cheddar Cheese
What you do
Sprinkle salt and black pepper over chicken.
Whisk eggs in a shallow bowl until smooth. Place panko in a separate shallow bowl.
Dip both sides of each chicken piece into the eggs and then in the panko.
Heat 3 tablespoons oil in a large skillet over medium heat. Cook the breaded chicken until crusts are golden and centers are no longer pink, about 4 to 5 minutes per side depending on thickness of the chicken.
Pour wing sauce over chicken and add your 1/2 stick of butter. Stir occasionally to mix the butter throughout. Be easy about it so you don't knock off all the panko! :)
Sprinkle cheese on top. Reduce heat to low, cover, and cook for 10 minutes.
